Ingredients

2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/4 teaspoon cloves

1/2 cup unsalted butter, softened

1 cup brown sugar, packed

2 eggs

1 1/2 cups unsweetened applesauce

1 teaspoon vanilla extract

1/2 cup chopped nuts (optional)

1/2 cup raisins (optional)


Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9-inch round or square baking pan.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
  3. In a large mixing bowl, beat the butter and brown sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Mix in the applesauce until well combined.
  6. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Avoid overmixing.
  7. Fold in chopped nuts and raisins if using.
  8. Pour the batter into the prepared baking pan and spread evenly.
  9. Bake for 35–40 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
