Description

This Apple Cider Whoopie Pie Cookies with Caramel recipe is the ultimate fall dessert! Soft apple cider-infused cookies sandwich a tangy cream cheese filling and luscious caramel drizzle. A perfect treat for cozy autumn nights, holiday gatherings, and festive baking. Try this seasonal dessert that blends caramel, cinnamon, and apple cider into every bite.

Ingredients

1 cup reduced apple cider

2 1/2 cups all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon ground cloves

1/2 teaspoon salt

3/4 cup unsalted butter

1 cup brown sugar

1 large egg

1 teaspoon vanilla extract

8 ounces cream cheese

1 1/4 cups powdered sugar

1/2 teaspoon vanilla extract

2 tablespoons heavy cream

1/2 cup caramel sauce

Cinnamon sugar (optional)

Instructions

1. Simmer 2 cups of apple cider in a saucepan until reduced to 1 cup. Cool completely.

2. In a bowl, whisk flour, baking soda, baking powder, cinnamon, nutmeg, cloves, and salt.

3. Cream butter and brown sugar until fluffy. Add egg, vanilla, and cooled cider. Gradually mix in dry ingredients.

4. Preheat oven to 350°F (175°C). Scoop dough onto parchment-lined sheets. Bake 10–12 minutes. Cool completely on wire racks.

5. Beat cream cheese until smooth. Add powdered sugar and vanilla. Gradually beat in heavy cream until fluffy.

6. Match cookie pairs, pipe filling on one, drizzle caramel, and top with second cookie.

7. Optional: Roll finished pies in cinnamon sugar for extra texture and flavor.

Notes

For a stronger apple flavor, don’t skip reducing the cider—it intensifies the autumn vibe.

If your caramel is too runny, refrigerate it slightly before using.

Want neater cookies? Chill the dough for 10–15 minutes before scooping.
