Description

These Apple Cinnamon Greek Yogurt Muffins are moist, tender, and bursting with warm cinnamon spice and sweet apple chunks. Made with protein-rich Greek yogurt, they’re a healthy muffin recipe perfect for breakfast or snacks. Easy to freeze and even easier to love!


Ingredients

1 ½ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

1 ½ teaspoons ground cinnamon

¼ teaspoon salt

½ cup brown sugar

1 large egg

¾ cup Greek yogurt

⅓ cup vegetable oil

1 teaspoon vanilla extract

1 ½ cups fresh apples, peeled and chopped


Instructions

1. Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.

2. In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.

3. In a separate bowl, whisk egg, brown sugar, Greek yogurt, vegetable oil, and vanilla extract until smooth.

4. Pour wet ingredients into the dry ingredients and fold gently until just combined.

5. Fold in the chopped apples without overmixing.

6. Divide batter evenly into muffin cups, filling each about ¾ full.

7. Bake for 18–22 minutes, or until a toothpick comes out clean.

8. Let muffins cool in tin for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Do not overmix the batter—stop as soon as you see no dry streaks.

For the best flavor, use tart apples like Granny Smith or Honeycrisp.

Store cooled muffins in an airtight container at room temperature or freeze for up to 2 months.
