Description

A cozy, spiced treat with rich cream cheese layers and caramelized apples nestled in soft cake. Perfect for brunch or an indulgent dessert, this coffee cake brings fall flavors into every bite.


Ingredients

3 medium apples, peeled, cored, and thinly sliced

2 tablespoons unsalted butter (for apples)

1/4 cup brown sugar (for apples)

1 teaspoon ground cinnamon (divided)

1/4 teaspoon ground nutmeg

8 oz cream cheese, softened

1/4 cup granulated sugar (for cream cheese)

1/2 teaspoon vanilla extract

1/2 cup unsalted butter (softened)

3/4 cup granulated sugar (for cake)

2 large eggs

1 teaspoon vanilla extract (for cake)

1/2 cup sour cream or Greek yogurt

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda


Instructions

  1. Prepare Apple Layer: In a skillet, melt 2 tbsp butter, then add sliced apples, brown sugar, and 1/2 tsp cinnamon. Cook until soft and lightly caramelized. Set aside to cool.
  2. Make Cream Cheese Filling: Beat cream cheese until smooth. Add 1/4 cup sugar and 1/2 tsp vanilla. Mix until creamy and set aside.
  3. Make Cake Batter: Cream 1/2 cup butter with 3/4 cup sugar until fluffy. Add eggs one at a time. Mix in 1 tsp vanilla and sour cream. Separately whisk flour, baking powder, baking soda, remaining cinnamon, and nutmeg. Combine dry with wet ingredients.
  4. Layer the Cake: Spread half of the batter into a greased baking dish. Add half of the cream cheese, then half of the apples. Repeat layers.
  5. Bake: Bake at 350°F (175°C) for 40–45 minutes or until a toothpick comes out clean. Cool completely before serving.
