Description

Ingredients

1 1/4 cups all-purpose flour

1/2 cup crushed graham crackers

1/2 cup unsalted butter, cold and cubed

1/4 teaspoon salt

3 to 4 tablespoons ice water

6 cups sliced apples (Granny Smith + Honeycrisp)

1/3 cup brown sugar

1/4 cup granulated sugar

1 tablespoon lemon juice

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

2 tablespoons cornstarch

1 teaspoon vanilla extract

2 tablespoons butter (for dotting)

1 egg (for egg wash)

1 tablespoon sugar (optional, for sprinkling)


Instructions

1. In a large bowl, mix flour, crushed graham crackers, and salt. Cut in cold butter using a pastry cutter or food processor until crumbly.

2. Add ice water gradually until dough forms. Divide in half, shape into disks, wrap, and chill for 30 minutes.

3. In a separate bowl, toss apple slices with lemon juice, sugars, cinnamon, nutmeg, cornstarch, and vanilla. Let sit for 15 minutes.

4. Roll out one dough disk and fit it into a 9-inch pie dish. Chill while preparing the top crust.

5. Fill the crust with the apple mixture. Dot with butter. Roll out the second disk and create a lattice or full cover. Seal and crimp the edges.

6. Brush with egg wash, sprinkle with sugar (optional), and bake at 375°F (190°C) for 50–60 minutes until bubbly and golden.

7. Cool on a rack for at least 2 hours before slicing.

Notes

Use a mix of tart and sweet apples like Granny Smith and Honeycrisp for the best depth of flavor.

For a crisp bottom, chill your crust before baking and use a glass pie dish on the lower oven rack.

Let the pie fully cool before slicing so the filling sets and doesn’t run.
