Ingredients
5–6 large yellow onions, thinly sliced
3 tablespoons butter
1 tablespoon olive oil
8 cups beef broth
1 cup dry white wine
4–5 sprigs fresh thyme
1 bay leaf
Salt, to taste
Freshly ground black pepper, to taste
8–10 slices baguette, toasted
2 cups grated Gruyère cheese
Instructions
1. Slice the onions thinly.
2. In a heavy-bottomed Dutch oven, heat butter and olive oil over medium-low heat.
3. Add the onions and cook slowly, stirring often, for 45–60 minutes until caramelized.
4. Deglaze the pan with white wine, scraping up browned bits.
5. Add beef broth, thyme, bay leaf, salt, and pepper.
6. Simmer uncovered for 30–40 minutes to deepen the flavors.
7. Toast baguette slices until crisp.
8. Grate the Gruyère cheese and set aside.
9. Preheat the broiler.
10. Ladle soup into oven-safe bowls.
11. Top each bowl with a toasted baguette slice and cheese.
12. Broil until cheese is melted and golden.
Notes
Stir onions frequently during caramelization to avoid burning.
For richer flavor, use homemade beef broth if available.
Add a splash of sherry before broiling for extra depth.
