Ingredients
1 pound ground beef
1 small onion, chopped
2 cloves garlic, minced
1 packet taco seasoning
2 cups enchilada sauce
8 corn tortillas
1 1/2 cups shredded cheddar cheese
1 1/2 cups shredded Monterey Jack cheese
1/2 cup sliced black olives
1 cup diced tomatoes
2 tablespoons chopped cilantro
1/2 cup sour cream
1 jalapeño, sliced, optional
Instructions
1. Preheat the oven to 375°F and lightly grease a 9×13-inch baking dish.
2. In a large skillet over medium heat, cook the ground beef and chopped onion until the beef is browned and the onion is soft. Drain excess grease.
3. Stir in the garlic and taco seasoning, then cook for 30 seconds until fragrant.
4. Add 1 cup of enchilada sauce to the beef mixture and stir until well combined.
5. Spread a thin layer of enchilada sauce in the bottom of the baking dish.
6. Add a layer of corn tortillas, overlapping as needed to cover the bottom.
7. Spread half of the beef mixture over the tortillas, then sprinkle with some cheddar and Monterey Jack cheese.
8. Repeat the layers with sauce, tortillas, beef mixture, and cheese.
9. Finish with the remaining enchilada sauce and the rest of the cheese on top.
10. Bake for 25 to 30 minutes, until the cheese is melted and bubbly.
11. Let the casserole rest for 10 minutes before slicing.
12. Top with black olives, diced tomatoes, cilantro, sour cream, and jalapeño if using, then serve warm.

Use freshly shredded cheese for the smoothest melt and best texture.
