Description

Ingredients

2 salmon fillets

1 bunch asparagus spears, trimmed

3 tablespoons unsalted butter

2 cloves garlic, minced

1 lemon, juiced and zested

2 tablespoons chopped fresh parsley

Salt, to taste

Black pepper, to taste

4 lemon slices

1 tablespoon olive oil


Instructions

1. Preheat oven to 400°F (200°C). Line a baking sheet with foil and prepare a second large sheet of foil for wrapping.

2. Place asparagus in the center of the foil, drizzle with olive oil, and season with salt and pepper.

3. In a small saucepan or microwave-safe bowl, melt the butter and stir in minced garlic, lemon juice, and zest.

4. Place salmon fillets on top of the asparagus. Season with salt and pepper. Spoon the garlic butter sauce over the salmon and top with lemon slices.

5. Fold foil over the salmon and seal to make a packet. Place the packet on the baking sheet.

6. Bake for 15-18 minutes, depending on thickness. Optionally broil uncovered for 2-3 minutes for a golden top.

7. Carefully open the foil, garnish with fresh parsley, and serve hot with pan juices spooned over.

Notes

Let the salmon rest in the foil for a minute before serving to absorb the juices fully.

Avoid overcooking: salmon is done when it flakes easily and reaches 135–140°F internally.

If using thicker asparagus, trim and peel the lower ends for even cooking.
