Description

Crispy Baked Zucchini Fries are the perfect healthy alternative to traditional fries! Made with zucchini, cornmeal, and Parmesan, these oven-baked veggie fries are crunchy on the outside, tender on the inside, and ideal for dipping. Great as a low-carb side dish, game day snack, or family favorite appetizer.


Ingredients

2 medium zucchini

1/2 cup all-purpose flour

2 large eggs

1/2 cup cornmeal

1/4 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/4 teaspoon black pepper


Instructions

1. Wash and dry the zucchini. Cut into sticks about 3-4 inches long and 1/2 inch thick.

2. Prepare three shallow bowls: one with flour, one with beaten eggs, and one with a mix of cornmeal, Parmesan, garlic powder, and Italian seasoning.

3. Coat each zucchini stick in flour, then egg, then the cornmeal-Parmesan mix. Press gently to make coating stick.

4. Place coated fries on a parchment-lined baking sheet or on a wire rack over the sheet for crispness.

5. Bake at 425°F (220°C) for 20-25 minutes, flipping halfway through, until golden and crispy.

6. Serve hot with your favorite dipping sauce like ranch or garlic aioli.

Notes

For ultra-crispy fries, use a cooling rack on your baking sheet to allow even airflow.

Avoid overcrowding the pan—space out the fries to keep them from steaming.

These fries are best served fresh, but can be reheated in the air fryer or oven for maximum crunch.
