2 boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup buttermilk

1 cup all-purpose flour

1 cup panko breadcrumbs

1 teaspoon garlic powder

1/2 teaspoon paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

2 eggs, beaten

Vegetable oil (for frying)

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tablespoon sriracha (adjust for spice level)

1 teaspoon honey (optional)

For Garnish:

Chopped green onions

Sesame seeds

Instructions

  1. Marinate the Chicken: In a bowl, soak the chicken pieces in buttermilk for at least 20 minutes.
  2. Prepare the Breading Stations: Set up three bowls—one with flour and seasonings, one with beaten eggs, and one with panko breadcrumbs.
  3. Coat the Chicken: Remove chicken from buttermilk, dredge in flour, dip into eggs, and coat with panko breadcrumbs. Press gently to adhere.
  4. Fry the Chicken: Heat oil in a pan to 350°F (175°C) and fry chicken in batches for 3–4 minutes until golden brown. Drain on paper towels.
  5. Make the Bang Bang Sauce: Whisk together mayonnaise, sweet chili sauce, sriracha, and honey in a bowl.
  6. Assemble and Serve: Drizzle the Bang Bang Sauce over the crispy chicken or toss it for a fully coated version. Garnish with green onions and sesame seeds. Serve immediately and enjoy!
