Ingredients

1 lb stew meat, cut into bite-size chunks

3 cups broccoli florets

1 ½ cups beef broth

⅓ cup soy sauce

2 tablespoons brown sugar

3 garlic cloves, minced

1 tablespoon cornstarch

1 tablespoon water (for slurry)

1 tablespoon cooking oil

1 teaspoon sesame oil (optional)

Salt and pepper, to taste


Instructions

1. Heat oil in a large skillet or wok over medium-high heat. Add stew meat in batches and sear until browned on all sides. Remove and set aside.

2. Reduce heat to medium. Return meat to the skillet and add beef broth, soy sauce, brown sugar, and minced garlic. Stir, cover, and simmer for 45-60 minutes until beef is tender.

3. Meanwhile, bring water to a boil in a saucepan. Blanch broccoli for 2-3 minutes, then transfer to an ice bath. Drain and set aside.

4. In a small bowl, mix cornstarch with 1 tablespoon cold water. Stir this slurry into the simmering meat mixture. Let it cook for another 2-3 minutes until the sauce thickens.

5. Add the blanched broccoli to the skillet and gently toss to combine. Cook for another 2-3 minutes to heat through. Drizzle sesame oil if using.

6. Serve hot over rice or noodles. Enjoy!

Notes

For faster prep, buy pre-cut stew meat and pre-washed broccoli florets.

Don’t skip browning the meat—it builds flavor that enriches the sauce.
