Ingredients

1 pound ground beef

1 cup elbow macaroni

1 medium onion, chopped

2 cloves garlic, minced

1 can (14.5 oz) diced tomatoes

1 can (8 oz) tomato sauce

4 cups beef broth

1 teaspoon Italian seasoning

Salt to taste

Black pepper to taste

2 tablespoons chopped fresh parsley (optional)


Instructions

1. Brown the ground beef in a large soup pot over medium heat. Break it up with a spoon and cook until no longer pink. Drain excess fat if needed.

2. Add the chopped onion and minced garlic. Sauté for 3-4 minutes until softened and fragrant.

3. Stir in the diced tomatoes and tomato sauce. Simmer for a few minutes to let the flavors develop.

4. Pour in the beef broth and sprinkle in the Italian seasoning. Stir to combine and bring to a boil.

5. Add the elbow macaroni. Reduce heat and simmer uncovered for 10-12 minutes, until pasta is tender.

6. Season with salt and pepper to taste. Serve hot, garnished with fresh parsley if desired.

Notes

For firmer pasta in leftovers, cook macaroni separately and stir it in before serving.

This soup freezes well—just avoid freezing with the pasta already mixed in.

To boost flavor, try adding a splash of Worcestershire sauce or a pinch of red pepper flakes.
