Description

This hearty Beef and Mushroom Pie is a comfort food classic made with tender stewing beef, savory mushrooms, and a rich gravy encased in a golden, flaky crust. Perfect for family dinners or cozy nights in, it’s the ultimate savory pie recipe.


Ingredients

1.5 lbs beef chuck or stewing beef

2 cups sliced mushrooms (cremini or button)

1 large onion, chopped

3 cloves garlic, minced

2 tablespoons all-purpose flour

1.5 cups beef stock

2 tablespoons Worcestershire sauce

1 tablespoon fresh thyme or 1 teaspoon dried thyme

Salt and black pepper to taste

2 tablespoons butter

1 tablespoon olive oil

1 sheet puff pastry or shortcrust pastry

1 egg, beaten (for egg wash)


Instructions

1. Heat oil in a heavy skillet or Dutch oven. Season beef with salt and pepper, sear in batches until browned. Remove and set aside.

2. In the same pan, melt butter and sauté onion until soft. Add garlic and mushrooms, cook until mushrooms brown and moisture evaporates.

3. Sprinkle flour over vegetables, stir and cook for 1 minute. Gradually pour in beef stock while stirring, then add Worcestershire sauce and thyme. Bring to simmer.

4. Return beef to the pan, cover and simmer on low for 45 minutes to 1 hour until beef is tender and sauce is thickened.

5. Preheat oven to 400°F (200°C). Spoon filling into pie dish. Roll out pastry, cover pie, trim edges, crimp, and cut slits on top.

6. Brush pastry with beaten egg. Bake for 25–30 minutes or until golden and crisp. Let cool slightly before serving.

Notes

Let the filling cool before adding it to the crust to prevent sogginess.

Mix different mushroom types for richer flavor.

Bake on a lower rack to crisp the bottom crust.
