Ingredients
1 lb ground beef (80/20 recommended)
12 oz rotini pasta
2 tbsp olive oil or butter
4 cloves garlic, minced
2 cups heavy cream
1 cup beef broth
1 cup freshly grated parmesan cheese
Salt and black pepper, to taste
1 tsp onion powder
1/2 tsp red pepper flakes (optional)
Chopped parsley or chives, for garnish
Instructions
- Boil a large pot of salted water. Cook rotini pasta until al dente, drain, and reserve 1/2 cup of pasta water.
- In a skillet, cook ground beef over medium-high heat until browned. Drain excess fat, leaving about 1 tbsp in the pan.
- Add olive oil or butter to the pan. Sauté minced garlic for 1 minute. Stir in onion powder and optional red pepper flakes.
- Pour in heavy cream and beef broth. Simmer for 4–5 minutes until slightly thickened.
- Reduce heat to low. Stir in parmesan cheese until melted and smooth. Season with salt and pepper.
- Return beef to the skillet. Add cooked rotini and toss to combine. Add pasta water if needed to loosen sauce.
- Garnish with parsley or chives and serve hot.
