Ingredients
1 pound ground beef
8 corn tortillas
2 cups shredded cheddar cheese
1 cup shredded Monterey Jack cheese
2 cups enchilada sauce
1/2 cup diced onions
1/2 cup sliced black olives
1 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon garlic powder
Instructions
1. Preheat the oven to 375°F (190°C).
2. In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat.
3. Add diced onions, chili powder, cumin, and garlic powder to the skillet. Cook until onions soften.
4. Pour in 1 1/3 cups of the enchilada sauce. Simmer for 5 minutes.
5. Lightly grease a 9×13-inch baking dish and spread a small amount of the remaining enchilada sauce on the bottom.
6. Layer 4 corn tortillas on the bottom of the dish.
7. Spread half the beef mixture over the tortillas. Sprinkle with half the olives and half the cheese.
8. Repeat the layers with the remaining tortillas, beef, olives, and cheese. Top with the rest of the enchilada sauce and cheese.
9. Cover with foil and bake for 20 minutes.
10. Remove foil and bake for another 10 minutes, until cheese is bubbly and golden.
11. Let rest for 10 minutes before slicing and serving.
Notes
Freshly shredded cheese melts better and gives a creamier texture.
For a spicy kick, use hot enchilada sauce or add diced jalapeños.
This casserole can be prepped the night before and baked fresh the next day.
