Description

This Beef Pepper Rice Bowl is a quick, flavorful one-pan dinner packed with savory ground beef, colorful bell peppers, and a rich soy-pepper glaze served over fluffy rice. Perfect for busy weeknights or meal prep, this easy beef stir-fry bowl offers comfort and bold flavor with every bite.


Ingredients

1 lb ground beef

1 red bell pepper, sliced

1 green bell pepper, sliced

1 yellow bell pepper, sliced

3 cloves garlic, minced

3 tablespoons soy sauce

2 tablespoons oyster sauce

1 teaspoon freshly ground black pepper

1 teaspoon sugar (optional)

1 tablespoon cornstarch

2 tablespoons water (for slurry)

3 cups cooked white rice

2 green onions, chopped (for garnish)


Instructions

1. In a large skillet or wok over medium-high heat, cook the ground beef until browned and cooked through. Break it apart with a wooden spoon as it cooks. Drain excess fat if necessary.

2. Add sliced bell peppers and minced garlic to the skillet. Sauté for 3–4 minutes until the peppers are slightly tender but still crisp.

3. In a bowl, whisk together soy sauce, oyster sauce, black pepper, sugar (if using), and cornstarch mixed with water to form a slurry.

4. Pour the sauce mixture into the skillet. Stir well and let it simmer for 2–3 minutes until the sauce thickens and coats the beef and vegetables.

5. Serve hot over warm white rice. Garnish with chopped green onions.

Notes

Let the sauce simmer long enough to thicken so it coats the beef and veggies evenly.

Don’t overcook the peppers—they should remain slightly crisp to contrast the tender beef.

For extra richness, a small knob of butter stirred in at the end brings an added layer of flavor.
