Ingredients
1 boneless skinless turkey breast
4 oz cream cheese, softened
1 cup frozen spinach, thawed and drained
1/3 cup sun-dried tomatoes, chopped
2 cloves garlic, minced
1/4 cup onion, finely chopped
1/4 cup feta or Parmesan cheese, crumbled
1 tbsp olive oil
1 tbsp butter, melted
1 tsp fresh thyme or rosemary, chopped
1/2 tsp salt
1/2 tsp black pepper
Instructions
1. Butterfly the turkey breast using a sharp knife. Lay it flat, cover with plastic wrap, and pound to an even 1/2-inch thickness.
2. Heat olive oil in a skillet. Sauté onion and garlic until fragrant. Add spinach and cook until moisture evaporates. Remove from heat.
3. In a bowl, mix the spinach mixture with cream cheese, sun-dried tomatoes, and feta or Parmesan cheese.
4. Spread the filling over the flattened turkey breast. Roll it up tightly and secure with kitchen twine at intervals.
5. Preheat the oven to 375°F (190°C). Place turkey in a baking dish. Rub with butter, season with salt, pepper, and herbs.
6. Roast for 45–60 minutes or until the internal temperature reaches 165°F. Baste occasionally if desired.
7. Let rest for 10 minutes. Slice into spirals and serve with sides.
