Description

This Best Ever One-Pot Lasagna Soup is a cozy, hearty twist on classic lasagna made in a single pot. Featuring ground beef, rich tomato broth, lasagna noodles, and a cheesy finish, it’s a weeknight favorite! Perfect for soup lovers, comfort food fans, and one-pot meal seekers.


Ingredients

1 pound ground beef

1 medium yellow onion, diced

3 cloves garlic, minced

1 tablespoon tomato paste

1 can (28 ounces) crushed tomatoes

4 cups beef broth

1 teaspoon Italian seasoning

¼ teaspoon red pepper flakes (optional)

8 lasagna noodles, broken into pieces

1 cup ricotta cheese

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

2 tablespoons chopped fresh basil or parsley

1 tablespoon olive oil

Salt and black pepper to taste


Instructions

1. Heat olive oil in a large Dutch oven over medium heat. Add diced onion and garlic, sauté for 3-4 minutes until fragrant and softened.

2. Add the ground beef. Break it up with a spoon and cook until browned, about 6-8 minutes. Drain excess fat.

3. Stir in tomato paste, crushed tomatoes, beef broth, Italian seasoning, and red pepper flakes. Season with salt and pepper. Bring to a boil, then reduce to a simmer.

4. Add broken lasagna noodles and stir gently. Simmer uncovered for 12-15 minutes, stirring occasionally, until noodles are tender.

5. Remove from heat and stir in ricotta cheese until creamy.

6. Ladle soup into bowls and top each with shredded mozzarella and Parmesan cheese.

7. Garnish with chopped fresh basil or parsley. Serve hot with garlic bread or salad if desired.

Notes

Slightly undercook the noodles if freezing or storing the soup to prevent them from becoming mushy.

For a vegetarian version, use vegetable broth and sautéed mushrooms or lentils instead of ground beef.

To avoid over-thickening, add a splash of broth or water when reheating leftovers.
