Ingredients

2 pounds Yukon Gold or Russet potatoes, peeled and cut into chunks

1/2 cup unsalted butter, softened (plus more for serving)

3/4 cup whole milk (warm)

1/2 cup sour cream

Salt, to taste

Freshly ground black pepper, to taste

Optional: chopped chives for garnish


Instructions

  1. Place the peeled and chopped potatoes in a large pot, cover with cold water, and add a pinch of salt.
  2. Bring to a boil over medium-high heat, then simmer for 15–20 minutes until fork-tender. Drain well.
  3. Mash the hot potatoes using a potato masher, ricer, or food mill until smooth.
  4. Gradually mix in the softened butter until fully absorbed.
  5. Slowly stir in warm milk a little at a time until you reach the desired creaminess.
  6. Fold in the sour cream and mix gently to combine.
  7. Season with salt and pepper to taste.
  8. Serve warm with a pat of butter and a sprinkle of chopped chives if desired.
