Ingredients
2 large boneless skinless chicken breasts
2 cups heavy cream
4 oz cream cheese, cubed
1 cup grated Parmesan cheese
2 cups chicken broth
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
½ teaspoon black pepper
12 oz penne pasta
2 tablespoons fresh parsley, chopped (optional)
Instructions
1. Place the chicken breasts in the bottom of your slow cooker. Pour in the chicken broth, and season with garlic powder, onion powder, salt, and pepper. Cover and cook on low for 4–5 hours until the chicken is tender.
2. Remove the chicken and shred it using two forks. Return the shredded chicken to the slow cooker.
3. Stir in the heavy cream, cream cheese, and Parmesan cheese. Whisk until smooth and creamy. Cook for another 15–20 minutes on low.
4. While the sauce thickens, cook penne pasta separately until al dente. Drain and add it to the slow cooker. Stir gently to coat the pasta with the sauce.
5. Sprinkle with chopped parsley and cracked black pepper. Serve warm and enjoy!
Notes
For extra richness, stir in 1 tablespoon of butter with the cheese mixture.
Want a veggie boost? Add broccoli florets during the last hour of cooking.
Don’t skip the separate pasta cooking step—this prevents mushy noodles.
