A savory and satisfying dinner, this Blackened Salmon Stuffed with Spinach & Parmesan combines bold spices, creamy filling, and flaky salmon in a gourmet dish that’s simple to make at home.
Ingredients
4 salmon fillets (skin-on or skinless, about 6 oz each)
2 tablespoons olive oil
1 tablespoon blackening seasoning
3 cups fresh spinach leaves
1 tablespoon butter
2 cloves garlic, minced
1/2 cup cream cheese (softened)
1/3 cup grated Parmesan cheese
1/4 teaspoon crushed red pepper flakes (optional)
Salt and pepper to taste
Fresh lemon wedges, for serving
Instructions
- In a skillet, melt butter and sauté garlic. Add spinach and cook until wilted.
- Remove from heat, mix in cream cheese, Parmesan, and spices. Set aside.
- Cut a pocket into each salmon fillet and season with blackening spice.
- Stuff each fillet with the spinach mixture.
- Sear salmon in an oven-safe skillet for 3-4 minutes per side.
- Transfer skillet to a 375°F oven and bake for 8-10 minutes.
- Serve hot with lemon wedges.
