Description

This easy Boat Dip recipe (Rotel Ranch Dip) is the perfect party appetizer made with cream cheese, Rotel tomatoes, ranch mix, bacon, and cheddar. Quick to prepare, crowd-pleasing, and ideal for chips or veggies. A flavorful no-bake dip that’s also make-ahead friendly!


Ingredients

8 oz cream cheese, softened

1 cup sour cream

1 can (10 oz) Rotel tomatoes with green chilies, drained

1 packet ranch seasoning mix

1 cup shredded cheddar cheese

1/2 cup cooked bacon bits

2 tablespoons chopped fresh chives or green onions

Optional: 1/4 cup diced jalapeños, black olives, or cooked sausage


Instructions

1. Let the cream cheese soften at room temperature.

2. In a large mixing bowl, blend the cream cheese and sour cream until smooth.

3. Stir in the ranch seasoning mix until fully incorporated.

4. Fold in the drained Rotel tomatoes, cheddar cheese, and bacon bits.

5. Mix gently until evenly combined.

6. Top with chopped chives or green onions.

7. Cover and refrigerate for at least 1 hour before serving.

8. Serve chilled with chips, pretzels, or veggies.

Notes

For extra spice, use Hot Rotel or add fresh diced jalapeños.

Freshly shredded cheese blends smoother than pre-shredded.
