Ingredients

1 ½ pounds shredded chicken or pulled pork

1 ½ cups corn kernels (fresh, frozen, or canned)

1 ½ cups lima beans or butter beans

1 can (14.5 oz) diced tomatoes

1 cup tomato sauce or ketchup

1 medium onion, chopped

3 cloves garlic, minced

4 cups chicken broth

½ cup BBQ sauce

1 tablespoon Worcestershire sauce

1 teaspoon salt

½ teaspoon black pepper

¼ teaspoon cayenne pepper (optional)

1 tablespoon oil (for sautéing)


Instructions

1. Heat oil in a large Dutch oven over medium heat. Sauté the chopped onion and garlic until soft and fragrant, about 3–4 minutes.

2. Stir in diced tomatoes, tomato sauce (or ketchup), and BBQ sauce. Let simmer for 5 minutes to meld flavors.

3. Add shredded chicken or pork, corn, lima beans, and chicken broth. Stir to combine.

4. Season with Worcestershire sauce, salt, pepper, and optional cayenne. Bring to a boil, then reduce heat and simmer uncovered for 30–45 minutes.

5. Taste and adjust seasoning if needed. Serve hot with cornbread or biscuits.

Notes

For deeper flavor, use smoked pulled pork or rotisserie chicken.

Mash some of the beans to naturally thicken the stew.
