Ingredients

1 ¾ cups all-purpose flour

¾ cup unsweetened cocoa powder

2 cups granulated sugar

1 ½ teaspoons baking soda

½ teaspoon salt

2 large eggs

1 cup buttermilk

½ cup vegetable oil

1 cup cherry soda (like Cheerwine or Cherry 7UP)

¼ cup maraschino cherry juice

1 ½ cups heavy whipping cream

½ cup powdered sugar

1 cup chopped chocolate or chocolate shavings

1 cup whole maraschino cherries (for topping)


Instructions

1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.

2. In a large bowl, whisk together flour, cocoa powder, sugar, baking soda, and salt.

3. In a separate bowl, mix eggs, buttermilk, vegetable oil, and cherry soda until smooth.

4. Combine the wet and dry ingredients, stirring until lump-free.

5. Pour batter into the baking dish and bake for 30–35 minutes or until a toothpick comes out clean.

6. Let the cake cool completely on a wire rack.

7. In a chilled bowl, whip heavy cream until soft peaks form. Add powdered sugar and cherry juice, and beat until stiff peaks form.

8. Spread whipped topping over the cooled cake.

9. Garnish with whole maraschino cherries and chocolate shavings before serving.

Notes

For best results, use regular cherry soda, not diet—diet varieties may affect the texture and rise.

Chill your mixing bowl and beaters before whipping cream to get the fluffiest topping.
