Ingredients

1 head cauliflower

1/2 cup buffalo sauce

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon paprika

1/2 teaspoon salt

2 tablespoons cornstarch

1 tablespoon fresh parsley or chives (optional)


Instructions

1. Wash and thoroughly dry the cauliflower. Cut it into bite-sized florets, keeping them similar in size for even roasting.

2. In a large bowl, mix olive oil, garlic powder, paprika, salt, and cornstarch. Add cauliflower and toss until fully coated.

3. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper and arrange the cauliflower in a single layer.

4. Roast for 20–25 minutes, flipping halfway through, until golden brown and crisp on the edges.

5. Warm the buffalo sauce in a small saucepan over low heat. Toss roasted cauliflower in the sauce until well coated.

6. Return the coated bites to the oven for 5–10 more minutes to set the sauce.

7. Garnish with parsley or chives and serve hot with ranch or blue cheese dip.

Notes

Dry the cauliflower thoroughly to avoid sogginess during roasting.

For extra crispiness, use a wire rack on the baking sheet to allow hot air to circulate.

You can adjust the heat level by using mild, medium, or hot buffalo sauce—or swap for BBQ if serving kids.
