A spicy, cheesy, and low-carb dinner that brings together tender cauliflower, shredded chicken, and creamy buffalo sauce for a bold, satisfying casserole.
Ingredients
1 large head of cauliflower, cut into florets
2 cups cooked shredded chicken
3/4 cup buffalo sauce
4 oz cream cheese, softened
1 1/2 cups shredded mozzarella cheese
1/2 tsp garlic powder
1/2 tsp onion powder
Salt to taste
1 tbsp olive oil
Fresh parsley, chopped (optional, for garnish)
Instructions
- Preheat oven to 400°F (200°C).
 - Toss cauliflower florets with olive oil and a pinch of salt. Roast on a baking sheet for 20 minutes until tender and lightly golden.
 - In a large bowl, mix softened cream cheese with buffalo sauce, garlic powder, and onion powder until smooth.
 - Stir in the shredded chicken until evenly coated.
 - Transfer roasted cauliflower to a baking dish. Pour the buffalo chicken mixture over the top and combine.
 - Sprinkle mozzarella cheese over the casserole.
 - Bake for 15-20 minutes until bubbly and the cheese is melted.
 - Broil for 2-3 minutes for a golden top if desired.
 - Let cool slightly, garnish with parsley, and serve warm.
