Ingredients

1 lb ground chicken or chicken breast chunks

1/2 cup buffalo sauce

2 cloves garlic, minced

1 tbsp olive oil or butter

8 oz rotini pasta

1 cup heavy cream

1 tbsp Cajun seasoning

1 tbsp ranch seasoning

1/2 cup grated Parmesan cheese

2 tbsp chopped green onions

Salt and black pepper to taste


Instructions

1. Mix ground chicken or chopped chicken breast with salt, pepper, and minced garlic.

2. Heat olive oil in a skillet over medium-high heat and sear the chicken bites until golden and cooked through.

3. Reduce heat and add buffalo sauce and extra garlic to the skillet, coating the chicken thoroughly. Allow to caramelize slightly.

4. In a separate pot, cook rotini pasta in salted boiling water until al dente. Drain and set aside.

5. In a saucepan, melt butter (or olive oil), then whisk in heavy cream, Cajun seasoning, ranch seasoning, and Parmesan. Simmer until creamy.

6. Combine cooked pasta with the Alfredo sauce, stirring to coat evenly.

7. Plate the pasta and arrange the buffalo garlic chicken bites around or on top. Garnish with chopped green onions and serve.

Notes

For milder heat, use a mild buffalo sauce or reduce the quantity slightly.

The Alfredo sauce thickens as it cools—add a splash of cream if reheating.
