Description

Cajun Alfredo Pasta with Garlic Butter Chicken Bites is a creamy, spicy pasta dinner loaded with bold Cajun seasoning, juicy chicken bites, and rich Parmesan Alfredo sauce. This easy weeknight meal is perfect for comfort food lovers craving restaurant-quality flavor at home.


Ingredients

1 lb fettuccine pasta

1.5 lbs boneless chicken breast or thighs, diced

1.5 tbsp Cajun seasoning

4 cloves garlic, minced

4 tbsp butter (for chicken)

3 tbsp butter (for sauce)

2 cups heavy cream

1.25 cups freshly grated Parmesan cheese

Salt and black pepper to taste

2 tbsp chopped fresh parsley (optional garnish)


Instructions

1. Cook fettuccine in salted boiling water until al dente. Reserve 1/2 cup pasta water, then drain and set aside.

2. Season chicken pieces with Cajun seasoning, salt, and pepper.

3. In a large skillet, melt 4 tbsp butter and sear chicken until golden and cooked through. Remove and set aside.

4. In a separate saucepan, melt 3 tbsp butter and sauté minced garlic for 1–2 minutes.

5. Pour in heavy cream and simmer for 5–6 minutes until slightly thickened.

6. Stir in Parmesan cheese and mix until smooth and creamy.

7. Toss cooked fettuccine into the Alfredo sauce, adding pasta water as needed to loosen.

8. Add chicken bites back in or serve them on top of the pasta.

9. Garnish with parsley and extra Parmesan if desired. Serve immediately.

Notes

Use freshly grated Parmesan for a smooth, non-gritty sauce.

Adjust Cajun spice level to suit your heat preference.

For a lighter version, substitute half the cream with milk and add a splash of chicken broth.
