Instructions
- Season the Chicken: Toss cubed chicken in Cajun seasoning until well coated.
- Cook the Chicken: In a hot skillet with oil or butter, sear chicken pieces until golden and cooked through. Set aside.
- Boil the Pasta: Cook rigatoni in salted water until al dente. Drain and save a bit of pasta water.
- Make the Sauce: In a pan, sauté minced garlic in oil or butter. Add heavy cream and simmer. Stir in Parmesan until melted. Add pasta water if needed.
- Combine Pasta: Add rigatoni to the sauce and stir. Mix in mozzarella. Optional: Transfer to baking dish, top with more mozzarella, and broil.
