Ingredients

Chicken breast, cubed

Cajun seasoning

Olive oil or butter

Rigatoni pasta

Heavy cream

Parmesan cheese, grated

Mozzarella cheese, shredded

Garlic, minced

Green onions or chives (for garnish)


Instructions

  1. Season the Chicken: Toss cubed chicken in Cajun seasoning until well coated.
  2. Cook the Chicken: In a hot skillet with oil or butter, sear chicken pieces until golden and cooked through. Set aside.
  3. Boil the Pasta: Cook rigatoni in salted water until al dente. Drain and save a bit of pasta water.
  4. Make the Sauce: In a pan, sauté minced garlic in oil or butter. Add heavy cream and simmer. Stir in Parmesan until melted. Add pasta water if needed.
  5. Combine Pasta: Add rigatoni to the sauce and stir. Mix in mozzarella. Optional: Transfer to baking dish, top with more mozzarella, and broil.
  6. Serve: Plate with Cajun chicken bites and garnish with green onions or chives.
