Ingredients
500g chicken breast or thighs
200g andouille sausage
1½ cups long grain rice
1 bell pepper, diced
1 onion, diced
2 celery stalks, diced
1 can (400g) diced tomatoes
2 tablespoons Cajun seasoning
3 cups chicken broth
2 cloves garlic, minced
2 tablespoons vegetable oil
Fresh parsley or green onions, for garnish
Instructions
1. Heat oil in a large pot and sear seasoned chicken until golden, then remove.
2. Brown sliced andouille sausage in the same pot.
3. Sauté diced bell pepper, onion, celery, and minced garlic until soft and fragrant.
4. Stir in rice and Cajun seasoning, coating all grains.
5. Add diced tomatoes and chicken broth; return chicken and sausage. Bring to a gentle boil.
6. Cover and simmer on low until rice is tender, 20-25 minutes.
7. Fluff, garnish, and serve hot.
Notes
Add cayenne pepper or hot sauce for extra heat.
Substitute sausage with shrimp; add shrimp in last 5-7 minutes.
Always use long grain rice for best texture.
