Ingredients

1 lb rotini pasta

1 lb boneless skinless chicken breast, diced

2 tbsp Cajun seasoning

2 tbsp olive oil

3 cloves garlic, minced

1 1/2 cups heavy cream

1 1/2 cups Velveeta cheese, cubed

1 cup shredded mozzarella cheese

2 tbsp chopped parsley (optional, for garnish)


Instructions

1. Season diced chicken breast with Cajun seasoning.

2. Heat olive oil in a skillet and sear chicken until golden and fully cooked. Set aside.

3. Boil rotini pasta in salted water until al dente. Drain and set aside.

4. In a saucepan, sauté garlic in olive oil until fragrant. Add heavy cream and bring to a simmer.

5. Stir in Velveeta and mozzarella until smooth and melted.

6. Add cooked pasta to the cheese sauce and mix well.

7. Fold in or top with the seared Cajun chicken.

8. Garnish with parsley and serve hot.

Notes

Use freshly grated mozzarella for the best melt and stretch.

Don’t overcook the pasta—al dente helps it hold its shape in the sauce.
