Ingredients
2 Chicken breasts
8 oz Spaghetti
1 cup Heavy cream
1 cup Mozzarella cheese, shredded
½ cup Parmesan cheese, grated
3 cloves Garlic, minced
2 tablespoons Butter
2 tablespoons Olive oil
1 tablespoon Cajun seasoning
½ teaspoon Salt
¼ teaspoon Black pepper
1 tablespoon Fresh parsley, chopped (optional)
Instructions
1. Pat chicken breasts dry and season with Cajun seasoning on both sides.
2. Heat olive oil in a skillet over medium-high heat. Sear chicken 4–5 minutes per side until cooked through. Remove and rest.
3. Boil spaghetti in salted water until al dente. Drain and reserve ½ cup of pasta water.
4. In the same skillet, melt butter and sauté minced garlic until fragrant.
5. Add heavy cream and stir continuously.
6. Gradually mix in mozzarella and parmesan until melted and smooth.
7. If sauce is too thick, stir in some reserved pasta water.
8. Add cooked spaghetti to the sauce and toss to coat evenly.
9. Slice chicken into strips and serve over pasta.
10. Garnish with parsley and a pinch of Cajun seasoning if desired.
Notes
Let the chicken rest before slicing to keep it juicy.
Add pasta water gradually to control sauce consistency.
Taste the sauce before adding salt—Cajun seasoning may already contain salt.
