Ingredients

1 lb chicken breast, cubed

8 oz linguine

1 ½ cups heavy cream

1 cup freshly grated parmesan cheese

4 cloves garlic, minced

3 tablespoons butter

1 tablespoon Cajun seasoning

1 tablespoon olive oil

½ teaspoon salt

½ teaspoon black pepper

1 tablespoon chopped fresh parsley (optional)


Instructions

1. Season cubed chicken with Cajun seasoning, salt, and pepper.

2. Heat olive oil and 1 tablespoon of butter in a skillet over medium-high heat.

3. Sear chicken until golden brown and fully cooked, then remove and set aside.

4. In a large pot, cook linguine in salted water until al dente. Reserve ½ cup pasta water, then drain.

5. In the same skillet, melt the remaining butter over medium heat.

6. Add minced garlic and sauté until fragrant (about 1 minute).

7. Pour in heavy cream and bring to a low simmer.

8. Stir in grated parmesan until melted and smooth.

9. Add a splash of pasta water if the sauce is too thick.

10. Toss cooked linguine in the sauce until fully coated.

11. Add the seared chicken back to the skillet and stir to combine.

12. Garnish with chopped parsley and serve warm.

Notes

Let the cream come to a gentle simmer before adding parmesan to prevent curdling.

Always reserve pasta water—it helps emulsify the sauce and adjust texture.

For more kick, add crushed red pepper or double the Cajun seasoning.
