Ingredients
2 large chicken breasts or thighs, diced
8 oz rotini pasta
1 cup heavy cream
4 cloves garlic, minced
3 tablespoons butter
2 tablespoons Cajun seasoning
¾ cup grated Parmesan cheese
2 tablespoons olive oil
½ teaspoon salt
¼ teaspoon black pepper
½ cup reserved pasta water
Chopped parsley for garnish (optional)
Instructions
1. Season the diced chicken with Cajun seasoning, salt, and pepper.
2. Heat olive oil in a skillet over medium-high heat. Sear the chicken until golden and cooked through. Remove and set aside.
3. In a large pot, cook the rotini pasta in salted water until al dente. Drain, reserving ½ cup of pasta water.
4. In the same skillet, melt butter on low heat. Add minced garlic and sauté until fragrant (about 1 minute).
5. Pour in the heavy cream and whisk until smooth. Add grated Parmesan and stir until melted.
6. Add the reserved pasta water to adjust the sauce consistency.
7. Return the chicken and cooked pasta to the skillet. Toss to coat well and simmer for 2–3 minutes.
8. Garnish with extra Parmesan and chopped parsley if desired. Serve warm.
Notes
Don’t overcook the garlic; it can turn bitter quickly. One minute is enough.
For extra creaminess, add a tablespoon of cream cheese to the sauce.
If reheating leftovers, add a splash of cream or milk to maintain the silky texture.
