Ingredients
8 oz linguine pasta
10 oz beef sirloin or flank steak, sliced thin
3 cloves garlic, freshly minced
3 tbsp unsalted butter
1 tbsp olive oil
2 tsp Cajun seasoning (more or less to taste)
1/2 cup heavy cream
1/4 cup grated Parmesan cheese
2 tbsp chopped fresh parsley
Salt and black pepper to taste
Instructions
1. Pat beef strips dry and season with Cajun seasoning, salt, and black pepper.
2. Heat olive oil in a cast iron skillet over high heat. Sear beef for 2–3 minutes per side until browned. Remove and set aside.
3. Cook linguine in salted boiling water until al dente. Reserve 1/2 cup of pasta water and drain the rest.
4. In the same skillet, reduce heat to medium. Melt butter and sauté minced garlic until fragrant. Add a pinch of Cajun seasoning.
5. Pour in heavy cream, stirring until combined. Simmer for 2–3 minutes.
6. Add cooked linguine and reserved pasta water to the skillet. Toss well to coat.
7. Stir in grated Parmesan and return beef to skillet to warm through.
8. Garnish with chopped parsley and more Parmesan if desired. Serve immediately.
Notes
For ultra-tender beef, slice against the grain and don’t overcook during searing.
Reserve pasta water helps loosen the sauce and adds flavor—don’t skip it.
To lower the spice, use a mild Cajun blend or reduce the amount used.
