Description

This Cajun Garlic Chicken Tortellini in Three-Cheese Cream is the perfect comfort food dinner. Featuring spicy Cajun-seasoned chicken, cheese-stuffed tortellini, and a creamy blend of Parmesan, mozzarella, and cream cheese. A rich, quick, and easy meal for weeknights or gatherings.


Ingredients

2 chicken breasts

1 pound cheese tortellini

1 cup heavy cream

1/2 cup Parmesan cheese, grated

1 cup mozzarella cheese, shredded

4 ounces cream cheese

4 cloves fresh garlic, minced

1 tablespoon Cajun seasoning

2 tablespoons butter

1 tablespoon fresh parsley, chopped

1/2 teaspoon red pepper flakes (optional)


Instructions

1. Rub the chicken breasts generously with Cajun seasoning.

2. In a skillet, melt butter and sear the chicken on both sides until golden and cooked through. Let rest, then slice.

3. Boil tortellini according to package instructions. Drain and reserve some pasta water.

4. In the same skillet, sauté garlic in butter until fragrant. Add heavy cream and bring to a simmer.

5. Whisk in cream cheese, Parmesan, and mozzarella until smooth and melted.

6. Add tortellini to the cheese sauce and toss to coat. Simmer for 2-3 minutes.

7. Plate the tortellini, top with sliced Cajun chicken, and garnish with parsley and red pepper flakes.

Notes

Use a splash of reserved pasta water to adjust the thickness of your sauce.

For extra heat, sprinkle more red pepper flakes on top before serving.

Freshly grated cheese melts better than pre-shredded cheese for a smoother sauce.
