Ingredients
1 lb sirloin or ribeye steak, cut into cubes
8 oz fettuccine pasta
1 cup heavy cream
3 tbsp butter
3/4 cup freshly grated Parmesan cheese
3 garlic cloves, minced
1 tbsp Cajun seasoning (adjust to taste)
2 tbsp olive oil
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions
- Season and Prepare the Steak: Pat steak cubes dry. Toss with Cajun seasoning, salt, pepper, and olive oil. Let sit at room temp for 15–20 minutes.
- Cook the Pasta: Boil salted water and cook fettuccine until al dente. Reserve 1/2 cup of pasta water, then drain.
- Sear the Steak: Heat oil in a skillet over medium-high heat. Sear steak cubes for 2–3 minutes per side until browned. Remove and tent with foil.
- Make Alfredo Sauce: Lower heat to medium. Melt butter in the skillet, sauté garlic until fragrant, add cream, and simmer. Stir in Parmesan until smooth. Adjust with pasta water if needed.
- Combine and Serve: Toss cooked pasta in Alfredo sauce. Plate and top with steak bites. Garnish with parsley.
