Ingredients
300 g sirloin or ribeye steak, cut into bites
300 g rigatoni pasta
2 tablespoons Cajun seasoning
1 cup heavy cream
1 cup Parmesan cheese, freshly grated
2 tablespoons butter
2 cloves garlic, minced
Salt, to taste
Black pepper, to taste
Instructions
1. Boil the rigatoni in salted water until al dente. Reserve 1/4 cup pasta water before draining.
2. Season steak pieces with Cajun seasoning. Heat 1 tablespoon butter in a skillet and sear the steak on high heat until browned outside, tender inside. Remove and keep warm.
3. In the same skillet, add 1 tablespoon butter and garlic. Sauté briefly, then pour in heavy cream, whisking until smooth. Stir in Parmesan, letting it melt into a creamy sauce. Season with salt and black pepper.
4. Toss the drained rigatoni into the sauce, adding a splash of reserved pasta water if needed. Return steak bites to the skillet, toss gently, and serve.
5. Top with extra Parmesan and cracked black pepper if desired.
Notes
Use freshly grated Parmesan for the smoothest, creamiest sauce.
Adjust Cajun seasoning to control spice level.
