This Caramelized Onion and Gruyere Dip is the ultimate cheesy, savory appetizer. Ingredients
1 tablespoon butter
2 large yellow onions, thinly sliced
2 cloves garlic, minced
1 teaspoon fresh thyme (optional)
8 ounces cream cheese, softened
1/2 cup sour cream
1/4 cup mayonnaise
1 1/2 cups Gruyere cheese, shredded and divided
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. In a heavy skillet, melt butter over medium-low heat. Add onions and salt. Cook slowly, stirring often, for 30–40 minutes until deeply caramelized. Add garlic and thyme in the last few minutes. Let cool slightly.
2. In a mixing bowl, combine cream cheese, sour cream, and mayonnaise until smooth. Fold in caramelized onions and 1 cup of Gruyere. Season with pepper.
3. Transfer to a greased baking dish or skillet. Top with remaining Gruyere.
4. Bake at 375°F (190°C) for 20–25 minutes, until golden and bubbling.
5. Serve warm with toasted baguette slices, crackers, or veggies.

Be patient with the onions—low and slow is key to rich caramelization.
Make it ahead: assemble, cover, and refrigerate for up to 24 hours before baking.
Swap cheeses: Fontina or sharp white cheddar can replace Gruyere if needed.
