Description

These Cheesecake Stuffed Red Velvet Cookies combine the soft chew of red velvet with a creamy cheesecake surprise in the center. A perfect treat for holidays, special occasions, or anytime you’re craving a rich and beautiful cookie.


Ingredients

For the Cookie Dough:

2 1/4 cups all-purpose flour

2 tablespoons unsweetened cocoa powder

1 teaspoon baking soda

1/2 teaspoon salt

3/4 cup unsalted butter, softened

3/4 cup granulated sugar

1/2 cup brown sugar, packed

1 large egg

2 teaspoons vanilla extract

1 tablespoon red food coloring

For the Cheesecake Filling:

8 oz cream cheese, softened

1/3 cup powdered sugar

1/2 teaspoon vanilla extract


Instructions

  1. Prepare the Filling: Beat cream cheese, powdered sugar, and vanilla until smooth. Scoop into small balls and freeze for 30–45 minutes.
  2. Make the Dough: Whisk flour, cocoa, baking soda, and salt in a bowl. In a separate bowl, beat butter and both sugars until fluffy. Add egg, vanilla, and food coloring. Mix in dry ingredients until combined.
  3. Assemble the Cookies: Flatten 1 tablespoon of dough in your palm, place a frozen filling ball in the center, and wrap the dough around it. Roll into a ball.
  4. Bake: Place on a lined baking sheet and bake at 350°F (175°C) for 11–13 minutes. Let cool 5 minutes on the sheet, then transfer to a wire rack.
