Ingredients

1 lb boneless, skinless chicken breasts

3 cloves garlic, minced

2 tablespoons butter

1 tablespoon olive oil

1 teaspoon Italian seasoning

1 teaspoon salt

½ teaspoon black pepper

10 oz rotini pasta

1 ½ cups heavy cream

1 cup freshly grated Parmesan cheese

1 cup shredded mozzarella cheese

1 tablespoon chopped parsley (optional)


Instructions

1. Season chicken with salt, pepper, and Italian seasoning.

2. Heat butter and olive oil in a skillet over medium-high heat.

3. Sear chicken pieces until golden and cooked through. Add minced garlic during the last minute.

4. Boil rotini pasta in salted water until al dente. Reserve ¼ cup of pasta water and drain the rest.

5. In the same skillet, reduce heat and add more butter and garlic if needed.

6. Pour in heavy cream and whisk until simmering.

7. Gradually whisk in Parmesan and mozzarella cheese until melted and smooth.

8. Stir in a splash of pasta water to loosen the sauce if it becomes too thick.

9. Add the cooked pasta to the sauce and toss gently to combine.

10. Serve immediately with garlic butter chicken and garnish with parsley.

Use freshly grated cheese to ensure your sauce melts smoothly.

Don’t overcook the pasta; al dente texture helps it hold the sauce better.
