Ingredients
1 pound ground beef
12 ounces rotini pasta
1 cup sweet corn kernels (canned or frozen)
1 ½ cups shredded cheddar cheese
1 small onion, diced
½ teaspoon garlic powder
½ teaspoon paprika
Salt and pepper to taste
1 can (10.5 oz) cream of mushroom soup (optional)
Instructions
1. Preheat oven to 375°F (190°C).
2. Cook rotini pasta in a large pot of salted boiling water until al dente. Drain and set aside.
3. In a large skillet, sauté ground beef and diced onion over medium heat until browned. Drain excess fat.
4. Season beef with garlic powder, paprika, salt, and pepper. Stir in sweet corn and cream of mushroom soup if using.
5. Add the cooked pasta to the beef mixture and mix until well combined.
6. Transfer mixture to a greased 9×13-inch baking dish.
7. Top evenly with shredded cheddar cheese.
8. Cover with foil and bake for 20 minutes.
9. Remove foil and bake for another 10 minutes until cheese is bubbly and slightly golden.
10. Let sit for 5 minutes before serving.
Notes
Use freshly shredded cheese for better melt and creaminess.
To add extra creaminess, stir in a dollop of sour cream before baking.
