Ingredients
1 pound ground beef
2 cups cooked rice
2 cups broccoli florets
1 ½ cups shredded cheddar cheese
1 small onion, diced
2 cloves garlic, minced
1 cup beef broth
1 tablespoon olive oil or butter
½ teaspoon salt
¼ teaspoon black pepper
Instructions
1. Heat olive oil or butter in a large skillet over medium heat. Add the diced onion and cook until soft and translucent.
2. Stir in the minced garlic and cook for 30 seconds until fragrant.
3. Add the ground beef, breaking it apart with a wooden spoon, and cook until browned and no longer pink. Drain excess grease if needed.
4. Add broccoli florets and pour in ½ cup of beef broth. Cover and steam for 5 minutes, until broccoli is tender-crisp.
5. Stir in the cooked rice and the remaining ½ cup of beef broth. Mix well to combine all ingredients.
6. Sprinkle cheddar cheese over the top, cover the skillet, and let it melt for about 2-3 minutes.
7. Once the cheese is melted, stir everything gently, season with salt and pepper to taste, and serve warm.
Notes
For extra flavor, swap cheddar for a mix of sharp cheddar and Monterey Jack.
Steam broccoli separately if you prefer a firmer texture.
Brown rice can be used for a fiber-rich option—just increase the broth slightly.
