Ingredients
1 pound ground beef
1 package (20 oz) cheese tortellini (refrigerated or frozen)
1 can (10 oz) red enchilada sauce
1 cup sour cream
1 ½ cups shredded Mexican cheese blend
½ cup diced onion
1 teaspoon garlic powder
½ teaspoon ground cumin
Fresh cilantro, for garnish (optional)
Instructions
1. In a large skillet over medium heat, cook the ground beef and diced onions until beef is browned and onions are soft. Drain excess fat if needed.
2. Stir in garlic powder, cumin, and enchilada sauce. Simmer for 2–3 minutes to blend the flavors.
3. Add tortellini to the skillet (pre-boiled if frozen). Stir to coat and cover. Let simmer for 7–10 minutes until tortellini is tender.
4. Lower heat and stir in sour cream and shredded cheese. Mix until melted and the sauce is creamy.
5. Garnish with chopped cilantro or additional cheese. Serve warm.
Notes
For extra spice, add jalapeños or a pinch of cayenne while cooking the beef.
Greek yogurt can replace sour cream if you prefer a lighter option.
