Description

Cheesy Cauliflower Grilled Cheese is the ultimate low-carb comfort food. This gluten-free sandwich replaces bread with crispy cauliflower patties and melts a layer of gooey cheese between them. Perfect for keto meals, veggie lovers, and anyone craving a healthier twist on a classic grilled cheese recipe.


Ingredients

1 medium head cauliflower (riced)

2 large eggs

1 cup shredded mozzarella cheese (divided)

¼ cup grated Parmesan cheese

½ teaspoon garlic powder

½ teaspoon Italian seasoning

Salt and pepper to taste

1 tablespoon butter or olive oil (for frying)


Instructions

1. Break down the cauliflower into florets and pulse in a food processor until it resembles rice.

2. Microwave or steam the riced cauliflower until soft, then let it cool.

3. Transfer cauliflower to a cheesecloth and squeeze out all excess moisture.

4. In a bowl, mix the drained cauliflower, eggs, Parmesan, ¼ cup mozzarella, garlic powder, Italian seasoning, salt, and pepper.

5. Shape the mixture into 4 bread-sized patties.

6. Heat a skillet over medium heat and add butter or oil.

7. Fry the patties for 5–6 minutes per side until golden and firm.

8. Place one patty in the skillet, top with remaining mozzarella, and cover with a second patty.

9. Cook on low until the cheese melts, flipping once for even browning.

10. Let cool slightly, then slice and serve warm.

Notes

Make sure to squeeze out as much moisture as possible from the cauliflower to keep the patties from falling apart.

You can bake the patties at 400°F for 20 minutes, flipping halfway, for a lighter version.

Add different cheese blends or a sprinkle of fresh herbs for a more personalized flavor.
