Ingredients

1 pound ground beef

4 cups thinly sliced Yukon Gold or Russet potatoes

1 medium onion, diced

2 cloves garlic, minced

2 cups shredded sharp cheddar cheese

1 can (10.5 oz) cream of mushroom soup

1/2 cup milk

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon paprika (optional)

1 tablespoon chopped fresh parsley (for garnish)


Instructions

1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.

2. In a large skillet over medium heat, cook ground beef until browned. Add onion and garlic; sauté until softened. Season with salt, pepper, and paprika if using.

3. Slice potatoes thinly (1/8-inch) using a mandoline or sharp knife. Rinse in water and pat dry.

4. In a bowl, whisk together cream of mushroom soup and milk until smooth. Stir in half of the shredded cheese.

5. Layer half the potatoes in the baking dish, followed by half the beef mixture, then half the cheese sauce. Repeat layers and top with remaining shredded cheese.

6. Cover tightly with foil and bake for 45 minutes.

7. Remove foil and bake another 15–20 minutes until cheese is golden and bubbling.

8. Let casserole rest 10 minutes before serving. Garnish with chopped parsley.

Notes

For extra tenderness, briefly parboil potato slices before layering.
