Ingredients
1 lb ground beef
4 medium potatoes, diced
2 cups cheddar cheese, shredded
1 can (10.5 oz) cream of mushroom soup
1 medium onion, chopped
2 stalks celery, diced
2 medium carrots, diced
1 tsp garlic powder
1 tsp onion powder
1 tsp salt
½ tsp black pepper
Instructions
1. In a large skillet over medium heat, brown the ground beef until no longer pink. Drain the excess fat.
2. Add chopped onions, carrots, and celery to the pan. Cook until just tender, about 5-7 minutes.
3. Peel and dice the potatoes into small, even chunks. Set aside in cold water.
4. In a large bowl, combine the beef mixture, drained potatoes, cream of mushroom soup, garlic powder, onion powder, salt, and pepper. Mix well.
5. Transfer the mixture to a greased 9×13” baking dish. Cover with foil and bake at 375°F for 45 minutes.
6. Remove foil, sprinkle shredded cheddar cheese on top, and bake uncovered for another 10-15 minutes until cheese is melted and bubbly.
7. Let the casserole rest for 5-10 minutes before serving.
Notes
Dice the potatoes small and evenly for the best cooking consistency.
