Ingredients

1 pound ground beef

4 cups frozen tater tots

2 cups shredded cheddar cheese

1 can (10.5 oz) cream of mushroom soup

1 cup sour cream

1 can (4 oz) diced green chiles (optional)

1/4 cup chopped green onions (for garnish)

1/2 teaspoon salt

1/2 teaspoon black pepper


Instructions

  1. 1. Preheat oven to 375°F (190°C). Brown ground beef in a skillet over medium-high heat.
  2. Season with salt and pepper. Drain excess grease.
  3. In a bowl, mix browned beef with cream of mushroom soup, sour cream, and green chiles.
  4. Spread beef mixture in a greased 9×13 inch baking dish.
  5. Layer frozen tater tots over the beef evenly. Sprinkle shredded cheddar cheese over the top.
  6. Bake uncovered for 35–40 minutes, until cheese is bubbly and tater tots are golden.
  7. Garnish with chopped green onions and serve hot.

Notes

For extra spice, add jalapeños or use pepper jack cheese.

Broil the top for 2–3 minutes at the end for extra crispiness.

Freeze assembled (unbaked) casserole up to 3 months; thaw before baking.
