Ingredients

1 pound ground beef

1 (10 oz) can Rotel tomatoes (diced tomatoes with green chilies)

16 oz Velveeta cheese, cubed

1 packet ranch seasoning mix

1/2 cup milk (optional, for thinning the queso)

1 tablespoon olive oil (for cooking beef)

Fresh cilantro or parsley for garnish (optional)

Tortilla chips or bread for serving

Instructions

  1. Cook the Ground Beef: Heat olive oil in a large skillet over medium heat. Add the ground beef and cook for 5-7 minutes, breaking it apart with a spatula, until browned. Drain any excess grease.
  2. Add Rotel and Ranch Seasoning: Pour the Rotel tomatoes (with juices) into the skillet. Stir in the ranch seasoning mix and cook for 2-3 minutes to blend flavors.
  3. Melt the Cheese: Reduce heat to low. Add cubed Velveeta cheese and stir until fully melted and creamy. Add a splash of milk if the queso seems too thick.
  4. Serve: Transfer the queso to a serving dish or slow cooker on “warm.” Garnish with chopped cilantro or parsley if desired. Serve with tortilla chips or your favorite dippers.
