Ingredients
2.5 lbs Russet or Yukon Gold potatoes, peeled and thinly sliced
3 tbsp butter
3 tbsp all-purpose flour
1 1/2 cups whole milk
1 cup heavy cream
2 cups shredded sharp cheddar cheese
2 garlic cloves, minced
1 tsp salt
1/2 tsp black pepper
2 tbsp chopped fresh parsley (optional)
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
- In a saucepan, melt butter over medium heat. Stir in flour and cook for 1-2 minutes.
- Gradually whisk in milk and cream until smooth and thickened.
- Stir in garlic, salt, pepper, and cheese. Mix until cheese is melted.
- Layer half of the potatoes in the baking dish. Pour half of the cheese sauce over.
- Repeat layers with remaining potatoes and sauce.
- Cover with foil and bake for 30 minutes.
- Remove foil and bake for another 25-30 minutes until golden and bubbly.
- Let rest 10-15 minutes before serving. Garnish with parsley if desired.
